I've noticed lately in my 1994 Buick Skylark (3.1 L V6) that when I accelerate hard, or if I'm going uphill while accelerating (basically anytime there's a good workload on it) I hear a banging noise. It's not terribly loud. Any ideas?

It sounds as thoe you could have a spark knock sensor that has gone bad.
This little gadget senses the spark knock in the cylinder and notifies the Engine Control Modual to change the timing. Yours is not.

Your getting detonation (pre-ignition) and is very bad for you engine. It's caused by carbon build up in the combustion chamber. When there's a load on the engine, the temp of the combustion chamber goes up. Carbon doesn't dissipate heat well, and when the new air and fuel enter on an intake stroke, the carbon ignites it before the spark plug can. Try running a tank full of higher grade gas and add bottle of Gumout, STP, or another fuel cleaner additive. Also, you may need a tune up.

it could be low octane fuel or perhaps timing is off a hair it sounds like u have a spark nock also called preignition try putting 93 octane fuel in the vehicle if prob goes away try sticking to at least 89 octane
most vehicles r not designed to run on 87 octane most require at least 88 trucks and suv's especially also most vw's require at least 88 if i run my jetta on 87 i get same prob as u read ur owners manual it will tell u the min octane rating for ur vehicle

Since you say that this sound is heard only during hard acceleration It could be because of engine detonation by a lean mixture(higher air to fule ration than normal). check your caurburation system and get the air and engine filters cleaned

Sounds like a blocked Catalyctic Convertor, either that or you have a timing problem.
