One theory is as follows:
Other great apes (and many other higher primates) have a nearly identical submission expression: they pull their lips back to reveal their teeth. This signifies that they are not a threat. The theory surmises that since this is ubiquitous among apes, it is likley to be a development from common ancestor, which would also be a common ancestor of ours.
The theory suggests that a smile is a development of this submissive expression. It states "I am not a threat". We smile to put people at ease. We smile to gain peoples trust. This evolved with us to be a general non-hostile expression, and thus became asociated with things we do while we are relaxed and at ease (fun & games, humour etc). Hence why we smile when we are happy (and thus relaxed, at ease, not threatened, safe etc).
This is just a theory of course, but it does make sense.

Because we have emotions...? Happy=smile, Sad=frown, just a form of expression.
