It's built into our 'hardwiring'.
For thousands of years, it was best to run away from anything that you didn't recognise, in case it was dangerous - better to run away and find that it wasn't dangerous, than stand your ground and be killed.
Similarly, anyone you didn't recognise (especially if they looked diferent - different hair colour, a bit taller than you...) was not from your tribe, and was therefore a potential danger to you and your family.
We, as civilised beings, know that it not the case - mbut something deep inside us still says 'run way, get some friends, fight' when we are faced with the unknown.

The unknown what?... oh I see, er, there is nothing to fear except fear itself.. some BS'er said... well it's probably due to the fact that we don't like things we are unfamiliar with. The first time you do something dangerous you get this queasy, sinking, empty feeling in the pit of your stomach.. the next time it's not so unknown so it doesn't have the same run and hide or flight response... a lot of animals will empty their bowels when scared, prior to running like hell, as it will make them lighter and they don't want to be carrying all that crap round in case they cant get away from the Lion, Wolf, Tiger, etc, so if you are going to be chased by a Lion, Wolf Tiger, etc or any other wild animal for that matter, then go to the toilet first..

Alot of what we fear- is a learned response. So maybe we get our security from what we know & understand- & vice versa. The "unknown" is beyond our experience- so we'd tend to shy away from it until we can get more information about it. Since each of us processes that information differently -we're all going to have different fears.

some people seem more scared than others.
I am fortunate to not have any particular phobias.
spiders, flying, heights, all are fairly OK by me.
My wife on the other hand is petrified of all of those, along with some others, Bridges, vomit, ghosts (even though she loves "most haunted").
i guess some people are just yellow.

Because we fear the unknown. And as Yoda puts it best, "Fear leads to anger. Anger leads to Hate. Hate leads to Suffering." Thus, people don't like or want to suffer.
