it is part of the Autuer Theory. it is just another way of keeping control and keeping a film his own.
Alfred Hitchcock, Orson Wells, Mel Gibson, have all done it. It is not ego but pride in their craft and not allowing it to become under control 100% by the studios.

I don't think he "Stars" in his own movies he just makes little appearance like Steven King makes in all of his books-turned-movies.

might be ...he wanted to be an actor , but unfortunately time molded him to becom a producer/ director, so he is fulfilling his desires, and the other thing wld be no one else wld hire him as an actor, so he makes his own opportunities.....lol
