Obviously, Professor Farnsworth has the vast advantage here. What with robots, the smelloscope, clones, gargoyles, boxes containing alternate universes, an interstellar starship and all the other gadgets and doodads at his control, Burns wouldn't last a second.

The professor, because in a lot of simpsons episodes, mr burns has a really hard time knocking over stuff like coffee tables etc, and he sits at his desk whereas the professor is more active as well.
