cooking comes to mind first. If you don't have the proper measuring devices you can always use another size and still be accurate enough to make the food.

It's not that the substitution method in particular is important in "real life," it's being able to solve systems of linear equations that is important. Solving systems of linear equations, or systems of equations in general, is something that is actually useful in the "real world." Most examples you find in textbooks are kind of contrived, but scientists and engineers do use this skill. For most people, however, they probably won't ever need it. The main reason you should learn skills and methods for problem solving is that studying these things helps you train your brain to think critically and analytically.
