I'm looking for the name of a professional wrestler (Think WCW, WWF) from the 80's. He was one of the big men (6'10+) but wasn't as popular as Andre the Giant. I think his name was Spanish sounding.

You might be talking about the "Giant Gonzales" in the WWF
Real Name: Jorge Gonzales
Birthday: January 31, 1966
Hometown: Argentina
Height & Weight: 7'7 - 435lbs
Previous Gimmicks: El Gigante (WCW)
Notable Feuds: The Undertaker
Last Match: August 30, 1993 - Summerslam: The Undertaker defeated Giant Gonzalez to recover his urn.

Here's a link to some pictures to confirm if he's the guy you are talking about. I hope I could help.
