If you and I were shipwrecked alone on a deserted island with no chance to escape, how long would it take?

How long would what take? Death?
Survival depends on available resources. Without water, about 3 days, more or less. Without shelter, 3-14 days, depending on the environment. Without food, 30-45 days.
Insanity? Typically 6-9 months without any human contact is sufficient to create severe emotional problems. 1-2 years... they become irrecoverable.
Escape? Depends on available resources. If I have to build the tools that will build the tools that will build the boat... it could take some time.
