It depends on what temperature the area where they would be growing is and how much sunlight they will be getting. You can use sunlamps, but those use a lot of electricity and generate heat.
Right now in my windowsill I have some herbs growing, but no vegetables. I have basil, parsley, dill, mint, and chives. None of them are too fond of air conditioning, but they get enough light so they're okay. Talk to a local garden shop and explain the conditions the plants would be living in. They should be able to point you in the direction of some hearty plants.

You can grow many vegetables indoors if you have enough light, try a polytunnel--they come in all shapes and sizes and create a very good environment for a large variety of plants. Good Luck

I have grown cherry tomatoes, parsley, oregano, and basil. Any of the herbs grows well. Any type of plant that can be grown in a container and is self-pollinating does pretty good growing indoors.

It's easy to grow leaf lettuce, spinach, and other salad greens in a flower pot placed near a sunny south window. Just keep them well watered.
