This happens at all of my single lever sink valves. Hot water measures 122.5 degrees with water running and handle in full hot position. When the lever is moved toward cold in one motion, the temperature momentarily rises to 122.7 degrees. Then, of course, the water gets cold. I can definitely feel the change with my hands, which led me to check this with a digital thermometer. Any theories?

There's something wrong with your valves.

Think of it - when your valve is set to 100% hot, the temperature of the water coming out of the faucet should be the same as being delivered by your hot water system (except for a slight loss in thermal conductivity in the hot water pipe). So if you are set to 100% hot, and then the temperature increases when you mix in cold water, it means (1) you are not getting 100% hot water (cold water is getting in) when you want it, or (2) your cold water is hotter than your hot water. As it is unlikely your cold water is hotter than your hot water, your valves are allowing a bit of cold water to leak into the hot water flow. Any setting of your valve between 100% and 0% hot water is a mixture of cold and hot, so the only rational solution to your problem is that your valves are not mixing the water in accordance with your desired setting.

If you can feel the difference between 122.7 and 122.5°F with your hands, you should rent them out as scientific testing instruments!

Possibly you get the cold water for an instant forcing out more hot water in front of it instantaneously than is present with the hot tap alone before the mixed hot and cold reaches the outlet. The increased flow will feel hotter and perhaps give better heat transfer and slightly higher reading to your digital thermometer.

The hot water causes something in the valve to expand and block some of the hot water.
