it's an Irish thing relating to a Leprechaun story. The little fella says "oh yes you may have my pot of gold it's right over there at the end of that rainbow "... so , as you know you can never find the end of the rainbow because it is a light refraction illusion that prevents you from seeing it if you get too close... a little like life in some cases.

The expression comes from an old saying "you are as likely to find the end of a rainbow as you are a pot of gold" or something along those lines essentially stating that you can't find either. I believe it was then misappropriated and altered to coincide with Irish mythology.

Some say it started with the Irish and their belief that leprechauns buried their pot of gold. If you have ever seen the end of a rainbow where it meets the ground, there tends to be a golden glow. So the mythology grew that there was a pot of gold buried there.
