The difference between greco-roman and pro wrestling is STAGGERING. Pro wrestling was at one point almost exactly like g/r, wrestlers would travel with sideshows challenging local tough guys to last X amount of minutes with him. He was the last American to win gold in wrestling at the Olympics in 96 and is still VERY much involved in amateur wrestling today. I may be able to get you started. First, the biggest difference is that real wrestling is a competitive sport, not an act for entertainment. Yes, pro wrestlers are often injured, but this does not change the fact that there is no competition and that the moves in pro-wrestling are purposely designed to LOOK dangerous while actually being safe when practiced by trained performers. Most of the dangerous-looking moves in pro wrestling couldn't be executed if the opponent was not helping with the execution, and would be very dangerous for both involved if the opponent was resisting.
Real wrestling, while not as exciting to watch by the untrained eye, is a much more physically demanding activity. This can be evidenced by the length of the respective matches (even Olympic wrestling matches are only 9 min. long), and the level of fatigue witnessed in competetors after their matches.
Unexperienced (real) wrestling looks very crude, as competetors match strength-to-strength to force each other into moves, but as wrestlers progress and face more competant opponents, it becomes much more important to take advantage of your competitor's momentum and balance. Often college matches will look very slow with both wrestlers slowly pushing, pulling and circling each other until the action explodes because one wrestler took advantage of the other's momentum or found a weak point in their balance.
The objective of real wrestling is ,first, to take your opponent to the ground while maintaining a dominant position on top of them, second, to use established moves to force an opponent from resting on their knees or stomach over to resting on their back, and third, to maintain a dominant position while planting their shoulders against the mat for an certain amount of time, depending on what kind and level of wrestling.
Wrestling is an ancient, ritualized alternative to fighting, which recognizes, first, that most fights eventually fall to the ground, second, that the fighter who maintains advantage by staying atop their opponent is in a dominant position, and third, that the weakest position in a fight is on one's back. It awards each of these positions by a point system, and in all kinds of wrestling, a match is stopped if the dominant opponent can hold the competetor on their back for a specific amount of time (usually between one and four seconds).
P.S. Greco roman is only one of three forms of popular wrestling, also including collegiate and freestyle. Collegiate is mainly an American style, practiced in American schools and colleges, while freestyle is, internationally the most popular form and is practiced alongside greco roman in the Olympics. Greco Roman is a particular form in which the legs of an opponent cannot be touched and where neither wrestler is allowed to lock or use their legs to manipulate an opponent.

I'm not shier about the face stuff they keep that stuff under raps to little guys like you as you know. But all you may need is fake they do Leeds into each other. What I would do is check out a wrestling college, there around. There's on in Portland, Oregon if that help. Plus they would be shier to give you some hook ups if you asked the right people.
