depends on how you want to use it. Unsaturated fatty acids are highly reactive compared to Saturated. Health wise, you'd want unsaturated over saturated. Biological wise, you'd want both. that is how cells are structured especially the lipid bilayers...you have a polar head with two fatty acid chains...one is saturated, the other is unsaturated. Both limits the cells structure and function.

saturated -plants
