Depends what is the Wattage of whatever you hang on the ceiling.
You need to know the current = wattage divided by voltage (110 or 220).
Then go to http://www.powerstream.com/Wire_Size.htm
and you see what wire gauge you need.

If you are rewiring a residence, the wires for the cieling fixtures are usually 14 gauge wire ( the most common) for a 15 Amp circuit and 12 gauge for a 20 Amp circuit and if you are rewiring a commercial space they must be 12 gauge.
To determine the circuit rating, trace the circuit you are using to the panel and determine the size of fuse or circuit breaker.

well if the fan or light requres extra wire then is depends on the Amps its probly 15 amps so you will need to use 14ga wire. but there is nothing wrong with going 1 gauge higher (12) just to be safe in case for some some reason its a 20 amp circut.

If it is a standard light use 14/2 if more than on switch use 14/3

lights are generally wired with 14 AWG, however you must ensure that the Fuse or Circuit breaker for that light is no more than 15 amps. if it is 20 amps you must use 12AWG

16-10 gauge...anything bigger would just be too bulky...smaller gets hooter, and is weaker etc.
We used 12 gauge for all our wiring :-) when buidng new homes or wiring of any home circuitry type.

12 - 14 will do ya, but i would ask a professional at the supply store where you are to pick up your wiring.
