I'm a qualified CELTA English teacher and have done this many times before - for my Taiwanese friends (for free).

5 Taiwanese MA students studying in the UK have asked me to proof read their work. They want to know how much I charge per 1000 words.

I can correct grammatical errors and make sure the thesis has a clear structure; however, I'm not an expert at the particular fields they specialise in. Considering this, how much should I charge?

Actually, proof readers charge by the hour.

But be careful that you're not copy-editing rather than merely proof-reading ... if you're checking the structure, use of English, etc. then you're editing, and should be charging more than for merely correcting punctuation/grammar.

A 'professional' proof-reader would charge around £15-£17 per hour; a proper copy-editor would charge upwards of £35 per hour. Having said that, if you're not a 'proper' copy editor then, to be honest, it would be rather naughty to charge those rates, especially if you're not an expert in the students' fields.

Dont go by 1000 words, simply goby the number of pages. If it is only proof reading (if not editingis not involved) you may charge 2 sterling pounds per page.
