The websites that I have read simply say that it helps absorb oil and dries to a matt finish. What I want to know is HOW it is able to do that? Does it prevent oil from coming out of the pores, or that it is really able to absorb the oil?

I have never heard of a product actually preventing oil production. I have however heard of products that absorb oil, and used them before. Usually mattifying make-up, for instance, will remain "flat" and without shine. You should use make-up like this if you have oily skin, so your face doesn't look too shiny.
