What would British people call what Americans call a "mall"?
I assume they call it something other than that, right?

Good question

We call them lots of things, we often call them malls, we would actually say "Maul" instead of mall but that is just semantics

Usually called a Shopping centre or Retail village or things like that

That would depend on what the definition of "call" is. Your question implies to a certain degree the validity of assumption, which under certain circumscribed parameters inhabit a space that can be conflated with reason, but depending on the calculus used to justify the abstract principles upon which your question is formulated, the resulting answer can be said to be questionable on the very premise you fail to delineate.

a shopping centre.

And they have nappy changing rooms that have nothing to do with hair either.

So we use different words, make sure you dont slip off the footpath and land on the dual carriageway.
