Hex-hex is interesting and fun, sort of like a game of hot-potato where it can explode, divide, and be blocked.
Apples-to-apples is a good party game, but somewhat mindless. Lots of laughs, though.
Pinochle is a thinking game, with trick taking, that I like a lot. Harder than hearts to learn. Oh Hell is also quite good, and uses a regular deck of cards. All My Diamonds is very good, too, designed by Sid Sackson and in his book Gamut of games, and uses a normal deck of cards.
Eleusis is an interesting game wherein you create a rule (with card sequences) and everyone tries to guess it. It's a hoot.
Magic the Gathering is also very good, but requires you to buy large amounts of "collectable" cards before you can effectively play.
Lost Cities is an extremely good game designed by Knizia.
Bohnanza is also very good, although the theme is bean-farming. "Bohn" is German for Bean.
And, finally, Pit is a lot of fun if you don't mind a LOT of shouting going on during the game.

Euchre (pronounced yu-ker) is a very fun game which is extremely popular in the Midwest. However you need 4 players (unless your playing cutthroat Euchre, which is complicated). Pitch is my second favorite.
