Air conditioners do not use water but swamp coolers do. If you have a swamp cooler turn the pump off and continue using the fan.

Is it your water feed plumbing that leaking or is the condensate tube clogged and over flowing from the air conditioner coil tray. Neither have anything to do with each other. Most do not know to clear the drain pipe on the AC

Well, unless you have a chilled water cooling system, you should be able to run the A/C without water. Chilled water systems are more typically installed in large buildings (office buildings, factories, etc.) and need to have make-up water for any leaks. Most residential systems run off freon and do not use water.

Unless your a/c system is somehow dependant on your water (most are not) it is actually very important to keep the air on. This will help remove the moisture from the air created by your leak. If the air remains off, your chance of having a severe mold problem is greatly increased.

Water has nothing to do with unless it was condensate water from the evaporator. Otherwise turn it on and let it help dry things out.
