Because Care takers of the house souls will show up in it. They were conjures of voodun/Hoodu and they can only appear to the person who has a mirror, then they come to posses your body for life. Listen to the Old lady when she tells the girl about why she doesn't keep mirrors in the house.

The old man seem to be afraid of the mirrors and then maybe the voodoo people or ghost were in them. But maybe they saw the real soul since the man was really luke and luke had the voodoo guy,,,,,its a good movie

Because it was the only way to see the evil thingamajig like their portal or something. As long as there were no mirrors, they couldn't come out.

cause that old man seemed to always freak out. i only saw part of the movie so i really dont know. but thats just my guess

because it would show the true reflection of the evil voodoo people..because the girl was looking at a illusion..
