technically they have hybrid roses now without thorns

Because there's more to the flower than it's petals: the color might be pretty, but there are other aspects to view....and experience. You might want to cut the thorn out; or you might want to tame the thorn; the point is: it's there, along with the pretty petals.
Depends on you: do you want to handle that thorn; or leave it for other gardeners?
