Sometimes they are NOT earplugs , but an in-ear monitor system. Little small earplug looking things that give them a reference to the sound mix without using - or in place of , those floor monitor "wedges" that are usually at the foot of the front of a stage.

Because they are trying to protect their hearing. Playing in front of those huge stacks of amplifiers can really damage your ears, especially if you do it night after night. Believe me, they can hear everything just fine at the volume that they play everything. But with ear plugs, they can also hear when they are done. It is for the sake of their own hearing.
If you are going to alot of concerts, then you may want to invest in a pair of earplugs yourself. Especially if you sit close to the stage regularly.
My husband used to run lights for rock bands, and he has hearing problems today because of it. If you are exposed to loud music regularly, then you should protect your ears.

Because the music is so loud they can't hear their voice enough to figure out if they're off-key. Ever try plugging your ears at a loud concert? You can hear much, much better - you lose that muffled sound by wearing earplugs.

dual purpose. So they can hear when playing through all the noise. First, they filter out the excess noise. And also, so they can hear later in life. Too much noise can have a long term affect on the hearing.

In a (usually) futile attempt at avoiding tinitis (permanent ringing). It usually doesn't work; I have to sleep with a fan in my room to drown out the sound.
