The answer is simply money. Why should an industry spend additional money developing a new idea into a movie when they can keep rehashing and remaking the old movies and old TV shows. The latest Superman movie still has not earned what it cost to make. Some of the best films now are the small indie movies that you don't see or hear a lot of publicity about until Oscar time. Oh, by the way I also heard Rambo is coming back.

Why not? They make come backs of everything else.
Yes, Sly is getting up there in age, but who didn't love Rocky?
I often hum the Rocky theme song as I run up & down the stairs at the gym! LOL!

Stallone isn't finding much acting work else, so he's trying to return to a proven workable formula.
He'll likely find that the audience for Rocky has moved on and he should too.

At Hollywood's feeble attempt o revive old franchises. Won't work. The fourth Riaders of the Lost Ark movie is coming out real soon too.

Jason (Friday the 13th) Freddy (Nightmare on Elm Street), Predator and Superman all have sequels, why not Rocky?
