BBC 4 did a program on this

a) caffiene is taken out as it's a stimulant & so people are less likely to want caffinated coffee in the evening.

b) the caffeine is sold to drugs manufacturers for purification & sale in things like 'pro plus' - caffeine in tablets to stay alert.

other interesting fact: removing the caffeine also results in some loss of flavour so they have to use richer beans to start with for decaf coffee. The richer beans are slightly fattier and so decaf has a few more calories than caffinated coffee!

It takes some 40 different chemical to treat coffee beans to decaffeinate it.
Caffeine is safer and healthier.
With one exception. Swiss decaf. They somehow found a way to do it naturally. Don't know much about that process.

Not sure, but decaffinated coffee still has 80% of the caffine found in full strength.
