Water! H2O is a great liquid to hydrolize, you can do it with a 9 volt battery. And as long as you dont plan on hydrolizing gallons of water (which would take a lot of 9 volt batteries) you wont have to worry about producing too much hydrogen. A test tube or cup full wont be dangerous, and unless you have a complex apparatus set up, it will be hard to capture much more than that.

Making and breaking of polymers: Dehydration synthesis: is an anabolic process by which two molecules are chemically bonded through the use of enzymes and a loss of water. glucose + glucose + enzyme = maltose + water + enzyme. Hydrolysis: is a catabolic process by which the bond between monomers are broken by the enzyme and the addition of water. sucrose + water + enzyme = glucose + fructose + enzyme.

That's electrolysis

Hydrolysis means water is added to something. For example, amino acids are linked by peptide bonds, which are really amides.

Amides are hydrolyzed to yield carboxylic acids and amines (hence the name amino acids).
