every person in the world who works in a factory/company who makes weapons, weapon systems, armaments, bullets etc just ...quit their job tomorrow morning. No more arms to bare. Would we eventually have peace?

Police could use their tazers and pepper spray.

People could get an honorable job or frankly any job that doesnt harm others.

Yeah, tazers and pepper spray they are still weapons.
And the military is an honorable job.

nope, in theory that sounds logical but people need money and if those people quit their jobs, they'd be replaced the next day.

If everyone who worked in a fast food joint quit would the world stop eating fast food? No, cause there's always someone there to take the place of another.

So long as anyone wants to initiate force against another for any reason there will not be peace. This includes forcing someone to give up their hard earned money (taxes), forcing someone to not put certain things in their bodies (drug laws), forcing someone to live by the ways of your religion, etc.
