Found out that this TV infomercial scam works this way: They send you 2 orders for every 1 you order & of course, charge you for two. Then to get your money back, they make you pay for return shipping! I found others via internet search (infomercialscam.com) that had the same thing happen to them. Am I obligated to return their extra product at my expense when I didn't order it?

There was no one to talk to when the order is placed. It is all by automated computer system, which confirms that one order of floam was made, and then at the end of this 20 minute spiel, they say "Thank you for your order of 2 sets of floam." The phone # they gave is always busy (conveniently) as well as it is long distance. However, I do have a documented email I sent to them the same day that denies I ordered 2. Is this enough paperwork?

She's right -- if you didn't order it, it's yours -- with a caveat: You have to be able to prove that you didn't order it. Otherwise it's their word against yours. If you still have the original paperwork, you're good. If you talked to a person on the phone, and you still have the reference number, you should call and check with them about your order. But if you have no proof that you didn't order two, and they have (obviously faked) documents proving that you did, you're on the hook to pay for it.
