I'd say you don't have a chance of survival once either animal attacks you--if its intent is to kill you. However, as it has been noted, a shark may mistake you for its prey and thus release you. I suspect polar bears will hunt you if you present yourself within their territory. Still, if a Great White Shark takes a big bite out of you, you're going to be in a world of hurt. It's as likely that you'll die from shock if not from blood loss.

Without a doubt its the Great White.
Why?
When a Great White attacks you it does so usually by confusing you with a Seal; afterwhich it will let you go, and swim away when it relises it was mistaken.
However, Polar Bears actually view Humans as a prey animal, meaning they wont give up and leave, but actually kill and eat you.
And, as for escaping either; impossible.
The fastest Human alive reached a maximum speed of around 23mph, whereas a Polar Bear can run at 25, meaning not even the fastest Human could manage to escape, not to mention the fact that the Polar Bears stamina is better then any Human's by far; how else can the large males travel through their territories that can be upto 100,000 square miles?
And, no explaining should be nessessary about the Great White; no Human can out swim one of those obviously.
Because of this, it all comes down to which one will actually go through with the kill, which turns out to be the Polar Bear...
The mane reason that there are so few Polar Bear attacks/fatalities is that we don't live near the areas in which they live, generally...though, this also is quite likely the reason why they do view as a prey item; not having really been exposed to us, they've never learned to fear us.

Great White Shark. Easily.
There's no way to escape from a polar bear, assuming a human does not have any protection (gun, car, house). The great white shark is intensly curious but is not the one which would attack to kill, unlike the polar bear. The polar bear needs to kill because food in the arctic is scarce and it has to grab every opportunity that comes by. And the polar bear has the resources to do that - superb sense of smell, a good streamlined body to swim, powerful forearms and snout and the mind of a hunter.
In the case of a shark, all you need to do is to get to land, but in the case of the polar bear, land or water or even a tree (if you can find one) is of no use.

Not that I want to find out but I think I'd have a better chance of survival against a Polar Bear.
Sharks are in their natural Habitat in the water, I'm not. I can at least run on land and stand a chance in a more comfortable environment.

neither, really. Probably a polar bear, since on land you can at least have a slim chance of running away (although they can run much faster than humans). A shark in the water will catch you every time.

I think one on one your chances are slim in either case but I would give the edge to the polar bear victim surviveing beacause you would probably be on land and at least you wouldnt drown.

Neither. Its like asking if you are more likely to survive a fall from 500m or 1000m. Of course the best way to survive is to stay away from them.
