Hi, there are a few types of missiles that can be launched against an aircraft. They are broadly classified into air launched air to air missile or AAM or ground launched surface to air missile or SAM. The AAM is small, usually achieve speed of better than mach 2 and is highly maneouvreable. For example, most can pull 'G's of over 15 'G'. So this type of missile is not easy to out fly or out-maneouvre. Most of the time defense against this type of missile is either chaff for radar homing missile or flare for infra-red seeking missile. One shortcoming of such missile is range and rocket burn time, so technically if the pilot can hold out a while, the missile will burn itself out in less than a minute.

As for SAM, usually there are various class, depend on size and range. Short range of up to 10km, medium up to 30 km and long range beyond these.

The short range SAM is usually small and difficult to detect. Hence it is quite a threat to the pilot. And being highly maneouvreable, it needs defenses like chaff and flares to avoid it.

The medium and long range SAM tend to be quite huge to carry it to those ranges. However it is still supersonic in flight and not easily outran. However, because it is bigger, it can be out-maneouvred. The timing has to be right or the pilot may be hit by the missile proximity fuzing. So, knowledge of the missile performance is paramount if the pilot wants to do this. Usually the easiest is still the chaff and flares to distract the missile and enable the pilot to escape its envelope.

I saw a SAM missle out maneuvered by a fighter in Vietnam. So the answer is yes. Seeing is believing.

Yes; if the missile is slower and less maneuverable than the jet.

there are some hi-tech airplanes that a friend of mine used to work on that actually could "outrun" a missle, but i don't think the regular ones can.
