The medical field is ALWAYS good and in demand as long as people keep getting sick.

Besides IT, medical and top management, in Greece and Spain you can always get a sales job in the time-share resorts (there are hundreds of them). They are mostly commission based, but you don't need any particular education and if you are good in sales you can make decent money.
