I'm not a religious person at all, but this question has always intrigued me. Here's my objective evaluation.
If you take the statement in it's broadest sense, (and if you believe in God in the first place), it has to be true. Everything artistic that anyone creates reflects their interpretation of a desire or vision. Write a book, paint a picture, whatever, and the final product will reflect your personality, your "image" if you will. So that's not so hard to believe. It would be far harder to believe if they said otherwise.
Creating woman from a man. Again, it would be far more unbelievable if they said otherwise. Just getting inter-species mating to happen is rare (tigers and lions, Mice and rats). If he was to make a woman, she'd have to have enough genetic similarity to procreate. So why not grab some homosapien DNA from the only working model available.
The 7 day thing - blow that one off to poetic license. Sort of like how I tell my kids that I walked 5 miles in the snow, uphill, both ways, just to impress them. I know they won't believe it, but it still makes my point that they don't need a ride to school!

This idea is not from the Quran.
From the Quran chapter 112(approximate translation):
"1 Say: He is Allah, the One!
2Allah, the eternally Besought of all!
3He begetteth not nor was begotten.
4And there is none comparable unto Him. "
God is not a man/woman and whatever shape or form we can imagine, that is not god. That is why images or statues made by men (or women) are not allowed/forbidden in islam and judaism.
The Aborigine idea of god is better than the christian one because they call "him" Atnatu or the one without an anus. ie. god does not need to eat to survive and therefore also does not need to go to the toilet. This would also mean that when Jesus ate at the last supper he was, in a subtle way, proving that he was not "god".
The Talmud is the writings of the scribes and the pharasees where they have devised laws. Those from the bible are called the Torah or "law".

I DO believe.... read the Bible without taking any fixed ideas with you, you might just see that it makes more sense than anything you thought before. There are people out there who set out on a serious mission to disprove the Bible, they desperately wanted to disprove God (they didn't want it to be true that He is real!) ... after loads and loads of researching and studies they actually found that the only thing that truly adds up is ... God. At the end of the day it's your choice what you believe. God could have left no room for you guys to doubt Him, but He has chosen to give everyone free will - you have choices to make - but one day everyone will see that He is God. Bless ya

Man could not of created God if there was no life nothing before he created the earth. So if there was nothing then it would be impossible for man to have been there already. Your argument for man needed to make women is actually a strong argument whether women are the inferior sex.

As with any quote from the Bible, remember it was written BY man FOR man, and the creation myth was written to explain what was then, unexplainable.

You got time?
Look in the mirror and look into your eyes (not at your eyes) and see the spirit within you, that internal spirit is the same spirit you emanated from.
