Why did Sir Anthony Hopkins try to choke Cuba Gooding Jr.'s chicken in the movie "Instinct"?

Please help me figure this oot- why did Anthony Hopkins try to choke Cuba Gooding Jr. in that one scene in the prison/crazy cracker house...and what was the lesson that he was trying to teach him?

I believe it was PAIN, not pleasure that Hopkins was trying to inflict. It was the classic "When you have them by the balls, their hearts and minds will follow."

Hopkins was trying to teach a lesson about control.
