You can use a TIG welder. Also there are electrostatic tools for engraving (don't know if these work.

TIG is awesome (Tungsten Inert Gas)! Permanent markers would work if you just need to put something informal.

you don't need a diamond or acid for stainless steel. it's not that hard of a surface. you can scratch into it with tools made especially for that purpose. you can find etching tools at any hardware store. just tell them you want to etch into stainless steel. they hould be able to point you to exactly what you need. the tool sets look like all-steel ice picks of varying widths.

YOu have to etch stainless steel with a diamond or acid.
