Do I need to have a water barrier applied to the walls, or are grouted ceramic tiles enough? Are there liquid products that can be "painted" on that will make the stall waterproof without tiling?

Believe it or not, there is a product that you can paint on your walls that will work. It might look a bit strange, ceramic tile or acrylic enclosures are more common. But you asked, and here you are:

The way I would do it is buy a shower surround from someplace like Home Depot or Lowe's if you are really concerned about the tiles. Plus a plastic surround is a lot easier to clean than grout between the tiles. Also over the course of time the grout will actually erode. Just a little food for thought.

You can't use a drywall wall as part of your shower enclosure. And if it's normal drywall and not at least green board or better cement board, then even worse for you. And no, you can't effectively paint on a coating that will make this last. The easiest thing you can do is go to Home Depot and buy a fiberglass shower stall to install.

okay, i'll answer this knowing you arent showering with a painted wall only... you can add a latex additive to your mud base and your grout before tiling. you can find it at a home center or tile store.

There is a speed wall shower kit. I do not believe any paint will with stand a daily shower more than a week.
