Managers should be professional, and act in a professional way. That means controlling temper/emotions.

Why? Because they are supervising other employees and they need to be respectful to both clients and staff. If they do not control their emotions, they are contributing to a hostile work environment, and they can get in serious trouble.

How can they control their emotions? By being mature adults. If they need help, most companies have employee assistance programs to provide guidance.
