I'm trying to grow some and it looks like there's a lot of buds, but I've only seen pictures of plants with one flower on top.

Yes one often gets more than one flower. It depends on the variety. The more flowers, the more seeds and most varieties are grown for seed. You can pick the smaller buds off as they develop, if you wish.

They only have one flower at a time. i believe, though, that if the first one dies, or is cut off before it seeds, one of the other "dormant" buds will produce a new flower until one makes it to seed.

There are different varieties and some have multiple flowers. I have had multi-head ones grow from birdseed that sprouted.
