From Mongabay.com :

"Iguanas have the ability to undergo a small color change to better blend into their surrounding environment. But the true color-change artists of the forest are the chameleons—of which every forested continent has its own. Chameleons are lizards that have the ability to rapidly change their colors to match their surroundings, although they tend to change more in accordance with their emotions. The Old World or true chameleons of Africa and Madagascar (pictures) have the best color-change ability and will often assume bright orange, purple, and blue coloring to reflect their mood. South America has the anole, a much less spectacular chameleon, while Asia has the agamas."

From Yahoo News:

"GENEVA (Reuters) - Biologists working in the forests of Borneo have found a previously unknown type of snake which can change its color spontaneously like a chameleon, the environmental body WWF said on Tuesday."

From Lady Wildlife :

"Flatfish such as flounder can change to resemble the seabed, half burying themselves for even greater effect. Frogs., toads, crabs, and prawns may become darker or lighter to match their surroundings. Some birds and mammals molt their summer coats and then grow a winter coat that blends in better with the winter white to resemble winter environment Either gray to match the leafless trees ot white to resemble the snow. the snowshoe hare, arctic fox, oroc ptarmigan, and ermine all turn white."

Finally, check Wikipedia, under Chromatophore (Chromatophores are pigment-containing and light-reflecting cells found in amphibians, fish, reptiles, crustaceans and cephalopods) for the information on how this happens.
