Well, geese belong to the bird order Anseriformes, together with the ducks, swans, and the less-known South American screamers.
Most of these birds have bills with lamellae, that is, small parallel plates arranged on the edge of the beak, that they use to sift small animals from water (you've probably seen ducks and swans do that). However, some Anseriformes have adapted to a more herbivorous diet, and their lamellae are reduced; therefore their bill is not flat and broad, but more narrow, and has sharper edges.
Geese use their bill to eat plants, especially tender shoots and buds. Ducks have other herbivorous relatives, the South American "geese", genus Chloephaga (which means "bud-eater"), and the screamers (genera Anhima and Chauna).

Geese don't eat grass, they smoke it.
That's where the expression, "You're goose is cooked," comes from.
It's also why geese have a perpetual cases of the "munchies."

The edges of their beak have ridges. They clamp on and tug, ripping the grass from their roots. (That's how they bite too, and yes, they will charge and bite you in the keester if you bend over. In Goose, lowering your head is an aggressive move, and when you bend over you are essentially flipping them off)
They eat most plants, they don't like burrs and cottage weeds. The problem is that they eat plants you don't want them to eat as well.
