There are two processes that are used, depending on what your needs are.
The standard method is to react a metal with an acid, such as zinc and sulfuric acid. However, you can also use aluminum and sodium hydroxide.
Another method is to perform electrolysis on water that has a small amount of salt added to enhance the conductivity.

Zinc (granulated) + 5 M Hydrochloric acid
Add 5 M hydrochloric acid to 5 - 10 g granulated zinc pieces.
Collect over water. 2HCl + Zn --> H2 + ZnCl2

with best yield you can get it by treating some metal with some H-acid (usually used is sulphuric acid)
