Is time only a fabrication of our minds, a superficial construct that helps us explain the universe?

Are you sure Albert Einstein said that? It sounds suspiciously close to Woody Allen's comment, "Time is that quality of nature which keeps events from happening all at once. Lately it doesn't seem to be working.", which Woody Allen actually lifted from some guy named "Anonymous" (at least the first sentence in that line).
I guess it's possible that Einstein was the anonymous source for that quote, but it's hard to imagine a quote of Einstein's being credited to anonymous sources.
Time is more than just a fabrication of our minds. Things do happen in sequence and you can order which happened first, second, etc.
The perception of time is highly variable. In an accident, a person's perception of time slows down and they can actually fit more pertinent thoughts into a given amount of time than they could normally. Of course, a lot of that is because the thoughts are pretty simple ("Run", "Duck", etc) and because all thoughts are focused on the crisis at hand. A person isn't going to solve a triple integral any faster just because he's falling from the top of a cliff.

Time is just a 4th dimension in the universe, we use it to identify objects. for example: it's not very enough to say:a person X is at school,
say: X is at school at 10:00 pm cause maybe at 11:00 the same X is at home.

Yes, what you state is true. There's no such thing as absolute time, no Cosmic Master Clock ticking away against which all other clocks must be compared.
