I don't do flying but have a wedding to get to on the other side of the planet next year. Unlimited time available for a trip but limited budget. What are the options? Are there any?

your only option would a transatlantic cruise from the UK to say Flordia or NYC and then take the Train or bus across the Continental US.
Cruise would cost you a couple thousand (USD) in the cheapest catgeory Stateroom. tack on another couple of grand for fare across CONUS, and all meals/lodging not otherwise covered, and you are easily taking over $5000USD and take about 2-3 weeks. or you could spend maybe $2000US on a flight and be there in 2-3 days...

You can take a transatlantic cruise, and then take a bus or train there, but otherwise, you have to fly.
Why is it that you don't do flying? That is the quickest way to get from the UK to the US, and it's usually kinda the cheapest

Walk along the ice in the winter. Cheapest way to travel. Boat is the only option.
