Have you ever been shopping in a store and suddenly a loud speaker comes on, "Attention shoppers, For the next 30 minutes
all ladies handbags will be 1/3 off."
Etc, etc,etc. For different merchandise.
This keeps many customers in the store for hours, as it may continue all day.
In a restaurant, one often sees a larger board at the entrance with the lunch specials of the day. One of the "glitches" in a busy kitchen is preparing a broad selection of entrees for patrons.
Any time the bulk of meals can be served as a fixed plate, the pace of service is increased. Also, the dishes can be prepared in large quantities beforehand. An added benefit is purchasing in quantity at a lower cost, thus increased profits generated by volume.
