Well Nightwish is the obvious one as they have just released a fantastic best of CD called Highest Hopes.
A more obscure band is Leave's Eyes but they are great too, Their latest album Vinland Saga is themed around vikings and the lead singer has a beautiful voice (and nice boobies if you like that sort of thing).
Another good band is Sirenia, they have a female lead singer (although the actual singer they have at the moment is a replacement I have been told she is as good as her predecessor).
If Tarja Turunen's new solo work is anything as good as her work with Nightwish I would say she will be rising star in Goth music.
For My Pain is another great band although they have a male lead singer most of their songs are duets with a female singer and the quality of their work is, in my opinion, unsurpassed in the genre and well worth a look.
I hope some of these bands are the kind you are looking for.

Evanescence isn't goth-metal, but alright. They're more of pop-metal. I'll go through these then, not goth-metal but still some genre of metal:

Ram-zet (male vocals, female backup) - Goth metal.
Mythic - Death-metal.
Tristania - Metal.
Edenbridge - Metal.
Pale Forest - Goth-Metal
Guano Apes - Metal.

There was a band who i can't remember it's name but the music vid had a woman in a huge red coat, and is was a gothic/celtic sounding tune, which i like.

I think they might of been called nightwish!!!
The lead woman has a great set of lungs.
