Depends, newer fantasy or older
I usually go the older ones like Legend, Dark Crystal, Krull, Princess Bride, Willow, Beastmaster, Neverending Story, The Last Unicorn, Goonies, Buckaroo Banzi, there's a couple more I could say, but I think you get the idea.
Newer ones I would pick Lady in the water, I love that movie now. I saw it yesterday and it was so great.

Good on you Ralfinader - you can't beat a film with some good swordfighting in it. I was wondering when someone would mention "Conan the Barbarian" and "The Sword and the Sorcerer", because they really ought to be included in any list of good fantasy films.
Although it's a much poorer film, mention must be made of "Conan the Destroyer" - if you like swordfighting. The fight choreography in the sequel is very good, even if the rest of it is pretty rubbish.

I love the fantasy genre. They really don't make enough fantasy flicks. Here is what I can remember:
Merlin
Princess bride
Harry potter
Lord of the rings
Excalibur
The mists of avalon
The neverending story
Willow
Legend
Dark Kingdom
And my fave of all time: The 10th kingdom. It was funny, intelligent, warm, and rather romantic. And it was delightfully long. I remember it spanning two VHS tapes. But they ought to have it on DVD by now.

i admire your checklist. indexed decrease than are my favorites: Princess Bride, LadyHawke Highlander, Raiders of the lost Ark Excalibur Ghostbusters The Navigator (A Medieval Odyssey) and those have been made after 1990, yet are superb: Pan's Labyrinth, lively Away and the Lord of the rings triology. possibly i'm gay, yet i admire them. ;-)
