I want to know a career I can pursue in college to make me a valuable employee for a major bike company, like Cannondale, or Trek.

Find out what the bike company does within the geographic area you want to live. Do they do sales? Then get a job at a smaller bike shop selling bikes. MAjor in sales. Do they manufacture the bikes? Then get an education in manufacturing. Are there jobs near the college where the bikes are used to take people on outings? Get a job there.

Bio-mechanics, Mechanical Engineering, Structural Engineer, Materials Engineer. Pick one of these then research the colleges to find the best one in each field. Any projects you do make sure revolve around the bikes etc.

Marketing, business management, engineering (yes, so you fully understand design issues).....of course it depends on what you'd actually like to do for the bike company.
