Generally they are only red when they are young so your husband is technically wrong. As the stalks get older they turn greener. It is best to pick for pies when young and red. If you wait until the stalks are older and green you can make a sauce similar to applesauce, using the same method. Wash, cut, and boil the rhubarb. Mash and stir with a potato ricer and sweeten to taste with sugar.

There are numerous varieties of rhubarb. Some are not red at all but may be green or pink. Without knowing your variety it is hard to say anything about it.

If you wait for the entire stalk to be red, you risk them rotting. Mostly red is how I gauge when to pick them.

It's better to pick them when they're smaller - when the stalks get big, they get tough and stringy.
