The HBO section of DVDs is good. Try these: OZ, Carnivale, Six Feet Under. I also just watched Undeclared. Try Chappelle's Show, too.

I really like some of the old black and white westerns like Paladin but I doubt they would satisfy your taste. It is shamelessly over acted sometimes. FYI Gene Roddenberry wrote several of the Paladin episodes and frequently big names were seen sharing the screen with the ethical gun fighter. On second thought, you might like this especially if you like a western now and then.
House is well written and well acted, all around Great. Monk is very good as well, perhaps second to House but a close second.
C.S.I. the original based in Las Vegas is a very good example of a character study. Science is stressed to the point where "sheer wonderment" has been brilliantly displayed. Add the personal character items sprinkled through the show and I consider it a winner.
The original Star Trek broke so much ground I couldn't do it justice here.
If you would consider movies, may I suggest The Caine Mutiny, Mutiny on the Bounty (the first is best, the second is very good, the third is soft porn), The High and the Mighty, Pinky (haven't seen this in decades but it made an impression on this kid, when he was a kid). I found E.T. ran the gambit of emotions, 2001 A Space Odyssey was great, 2010 was a waste. Das Boat was good, I was a Male War Bride had it's moments.

Buffy the Vampire Slayer.
Superbly well-written, unconventional, funny, touching, creepy, varied, with high artistic standards on and behind the camera. (Don't watch any special features your first time through -- they contain spoilers.)
Can't do better. (I don't like horror, myself, ordinarily, but this show is so much more than that.)
The same mind was also behind Angel and Firefly (and the movie Serenity, which continues Firefly). Although they aren't AS good (but then, Buffy would be hard to equal and impossible to beat), there are also quite good.
I also love the Dick Van Dyke Show, Sports Night, and As Time Goes By.

Oh goodness....there are tons of funny TV shows you should give a try! Personally, my favorite is South Park....but it sounds like you might Arrested Development, which stars David Cross (one of the Mr. Show guys) as one of the characters. It's hiliarious and won Emmys, but is underappreciated and probably lead to stupid FOX canceling the show. That is a really good show to consider.
Other good shows are The Office, which is a fake reality tv show type thing. Reno 911 is the fake COPS, which is also quite hilarious. A quite genius show that I think more people should know about is Da Ali G Show, where Sasha Baron Cohen plays 3 different characters and interviews people like Boutros-Boutros Ghali (sp? And I forget where he's from), Donald Trump, Andy Rooney, and Buzz Aldrin. He asks them really ridiculous questions and says ridiculous things, and it's quite interesting to see how they react to them. I.e. he refers to Buzz Aldrin as Buzz Lightyear.
Anyway, those are my suggestions. Hopefully you try them out sometime and find that you love one or another of them as much as I do!

All of The Sopranos seasons are worth the money. I can watch them over and over.
Also Nip/Tuck is always entertaining.
