No. If the King can take the Queen without moving into check in the process, it's not checkmate in the first place. Only Check.
Checkmate is when the game is over.

The King can make any move whilst in check including taking the opposition's Queen to escape Check.
However if the King is in Checkmate, it means there are NO more legal moves to make that would take it out of check in one move -therefore by taking the Queen it would still leave you in check?

In checkmate no. That means the king has no move. If capturing the Queen takes you out of check, then yes, you can't move into check though.

You need to be more careful with your terms
Checkmate is when the game is over and king cannot move away from check
If the queen has moved next to the king and is not protected and calls check then the king can take the queen
If a piece is not protected and the queen moves and calls check then the king can take any unprotected piece if it is one sqaure away from the king

Checkmate?
Checkmate is when you can't move your king anywhere and the king is under threat where it is.
If you are under check (king threatened by some other piece), then you can take, no matter if it is the queen or some other.

If you can take a piece and get out of harm's way you are not in checkmate, you are in check. Take the piece and tell your opponent the move they made was not checkmate.

If the king can take a piece any piece on the board then he can move and therefore it is not checkmate

If you're in checkmate, you have no options left. If you've been checked, and your only out is to take another piece, then go for it.
