It's hard to say. Personally speaking, Alfred Hitchcock is my favorite filmmaker. He displayed an unmatched level of filmmaking precision, was a master at creating suspense and atmosphere, employed incredible cinematography and inventive camera techniques, and used his films as forums for his deepest fears and obsessions.

Anyway, here's a list of some of my favorite filmmakers and their greatest films:

Wow! evil_atheist, agree with your opinion about Alfred Hitchcock. As you have mentioned two Asian filmmakers in your list (the top 2 in my list), I also would like to add a few younger Asians here (they are still alive)!

I like "Not Yet" most, the story was about how a retired teacher maintained his peaceful life when daily lives was so difficult soon after WW2 in Japan

Yasujiro Ozu (1903 - 1963), Japan:
Mata au hi ma de (1932), Eng. Title: Until the Day We meet again
Toyko monogatari (1953), Eng. Title: Tokyo Story
Ohayo (1959), Eng. Title : Yasujiro Ozu's Good Morning

Kon Ichikawa (1915 to -- ), japan:
Ototo (1960), Eng. Title: Brother
Wagahai wa Neko dearu (1975), Eng. Title: I am a Cat
Sasame Yuki (1983), Eng. Title: The Makioka Sisters

I like Sasame Yuki most, the story was about the relationship between 4 sisters from a family in Kyoto.

Masayuki Suo (1956 to -- ), Japan:
Shiko funjatta (1992), Eng. Title: Sumo Do, Sumo Don't
Shall we dansu (1996), Eng. Title: Shall we dance?

I like Suo's comedies because the movies make you think more about lives then just slaughter you

Ann Hui (1947 -- ), China, Hong Kong:
Boat People (1982)
Woman Forty (1994), Eng. Title: Summer Snow

Ann Hui has a unique way of expression in her movies, Boat People tells about how desparate the Vietnamneses wanted to escape from Vietnam after War. Woman Forty is a comedy about how a middle age working woman takes care of her family burden, her father-in-law, who seized with Alzheimer after her mother-in-law passed away.

Someone in the Western Country refered Hark Tsui as Chinese Steven Spielberg, well.. I do not agree about it, however, he did quite some good ones! I like Butterfly Lovers most, simply because I love that love story since I was a kid, haha..., most guys like Wong Fei Hung Series that promoted Jet Li to be a Super Kung Fu Star

The Road Home (1999)
Ying Xiong (2002), Hero

Yimou Zhang is the one who made Gong Li as a star in Red Sorghum, then he found Zhang Zi Yi (the young actress in Crouching Tiger, Hidden Dragon) and trained her to be an actress.

Hsi Yen (1993), Eng. Title: The Wedding Banquet
Yin shi nan nu (1994), Eng. Title: Eat Drink Man Woman
Sense and Sensibility (1995)
Wo hu cang long (2000), Eng. Title: Crouching Tiger, Hidden Dragon

Ang Lee is well-known because he is the first Chinese Director that got an Oscar (Brokenback Mountain), however, I like his old movies, Eat Drink Man Woman, most!
