Canning garlic is not recommened because garlic loses much of its flavor when heated.

Type "how to keep garlic fresh" or something like that in the search box of a website as Yahoo, Google, etc. and you'll get what you want more than you need!

Just pack it in jars and fill the jars with olive or vegetable oil. It preserves the garlic and flavors the oil.
